Soba Noodles with Veggies

It seems like awhile since I last cooked and I was craving for something healthy.

I made a quick dinner by cooking soba noodles with vegetables. For flavor, I tossed it with some soy sauce and sesame oil. I knew I needed some protein, so I topped it off with poached an egg (first time poaching!).

I love runny egg yolks and it bound all the flavors together. Quite a simple meal that required minimal work and importantly, dishes.
