Vegetarian for a Night

It seems like it's been awhile since I cooked. Jason's been cooking up a storm these past couple of weeks.

Inspired by a dish from the Gapeteria, I sautéed a big portobello mushroom and made a quick vegetable mix with canned tomatoes, chickpea and fresh corn. Similar to the meal I had at work, I cooked some spinach and stuffed it under the mushroom cap.

It was a good, light vegetarian dinner. The original was much better, considering their vegetable mix of chickpeas and tomato was more like a stew and saucier. I'd give it another shot.
