Steamed Clams + Mussels in Beer

Steaming clams or mussels is by far the easiest way to spice up a weeknight. Seriously, it takes less than 10 minutes and it's delicious!! I usually make it with white wine, but I wanted to try it with beer.

I first sautéed some chopped bacon in a pan. When that's done, remove the bacon, set it aside and drain most of the oil from the pan. With just a tad of bacon grease in the pan, sauté chopped onions and garlic. After the onions are softened (minute or two), pour some beer into the pan and include the clams and/or mussels. You should have enough liquid to cover about a third of the seafood. Cover with a lid and let it soak in the delicious flavor until the clams/mussels open. Throw in some chopped tomatoes the last couple of minutes and you're ready to serve.

All the measurements are eyeballed, but don't worry, it'd turn out good! You can't go wrong with beer, bacon and seafood. :)

I recently saw on a menu, steamed clams in sake! That's definitely next on my list.
