Easy Chicken with Lemon Caper Sauce

Woo hoo, I love having groceries at home to cook with. :)

Next up, a simple chicken breast with green beans in a lemon caper sauce.

I lightly breaded the chicken by dipping it in egg, then flour and shook the excess flour off. A hot pan with olive oil and garlic was the base for searing the meat. While the chicken was cooking, I threw the green beans in boiled, salted water. After the chicken had a light brown coating, I took it out of the pan and placed it in the oven to stay warm. The green beans should be done; don't overcook them!

To make the lemon caper sauce, I used chicken stock to get the yummy chicken pieces off the pan (flavor!) and added a tablespoon of capers. I let it cook for a little bit (not more than 2 minutes), added butter until it melted and squeezed some lemon juice into the sauce.

Done and done. Love this meal. It's so simple and quick.
