Back on Track, Part 3

My intention was to cook every day of the week and follow scheduled recipes from Real Simple magazine.

Monday and Tuesday was a success, but when Wednesday rolled around, my willpower was squashed and I went out with friends to eat.

Trying to get back on track with quick beef tacos.

I had a bag of mixed greens in the fridge, so I added it to the tacos for a fresher and healthier taste. I usually add shredded cheese to my tacos, but the recipe didn't call for them – just salsa, avocado, sour cream and cilantro. I actually didn't miss the shredded cheese and loved this variation.
