Zucchini + Corn Fritters

I had a ton of zucchini in my fridge, so when I saw this recipe, I knew it was a great way to get rid of the vegetable. I've never made anything like this before, but I was anxious to try since it reminds me of potato pancakes.

The recipe was pretty easy to make and definitely got rid of all the zucchini in my fridge, but the fritters weren't crispy at all! :( After frying them in oil, I placed them on paper towels to drain, so maybe that is what caused them to soften.

Although they did not have a crispy crust, the combination of shredded zucchini and corn was good. The vegetable was soft with a slight sweet crunch from the corn. An extra dollop of sour cream also sealed the deal.

I could only eat a few in one sitting, but the leftovers made a great snack the following few days. I still prefer potato pancakes, but this was a sure way to get rid of zucchini quick.
