Leftover Turkey

The best part about Thanksgiving is the leftover turkey. Every year, I take home a big chunk of the meat (bone-in) and make turkey soup. It's so easy too! All I do is sauté some mirapoux (onion, celery and carrot) and potatoes in olive oil, throw in whatever herbs I have on hand (rosemary,thyme, etc) and the turkey, add a few cups of water and let it cook for about half an hour to an hour.

What you get is a delicious, comforting and body warming soup. So good and it lasts you for at least a week. Got leftover soup? Pop it in the freezer and on any chilly night, simply defrost and treat yourself to some yummy soup.
